Chiroso is a bright, aromatic variety, and the Lasso family's multi-stage natural has layered sweet apple and red fruit over a rounded cocoa base, with a cooling menthol lift that is the signature of this lot. The AeroPress brews it as a concentrated immersion that rounds the cocoa out, then a splash of bypass keeps the apple and red fruit clean and lifted.

We brew it upright, not inverted. The menthol is a delicate, volatile note and this is already a loud ferment, so flipping an inverted chamber churns the slurry right before the press and muddies that clarity. Upright keeps the agitation gentle and loses less heat. Sort your water and grind, then brew.

Roasted on
Sealed low-temperature drying holds the aromatics well, but fresh coffee still gasses off. Past its peak the bright fruit fades and the cocoa flattens, so ease the heat down. It peaks a little late, so give it to day 14.

Water

Dubai, bottled
Best match Masafi Pure

Magnesium 18, bicarbonate 8 (the lowest we tested), chloride 62. The magnesium lifts the apple-tart acidity and red fruit, the low bicarbonate keeps the brightness and the menthol defined, and the chloride supports the juicy, rounded cocoa this natural is built on.

Masafi Pure the pick: juicy and sweet, holds the cocoa while the fruit stays bright

Arwa brighter and crisper, but sulfate 77 dries the finish and thins the silky cocoa. Only to chase the apple and red fruit sharper.

Al Ain balanced, a touch more buffered. A safe middle ground.
HCO₃ 30
Mai Dubai Zero+ bicarbonate 125 buffers the acids and flattens the bright fruit and the menthol. Avoid for this one.

The cup you're chasing

A clean, high-clarity immersion with more body than the filter. Sweet apple tart and red fruit up top, a rounder cocoa and tamarind-jam middle built by the steep, and a cooling minty-chocolate lift that defines as it cools. The bypass keeps the fruit clean on top. If the menthol turns medicinal or the cup reads boozy, drop the temperature before you touch the grind.

Ready
Two rinsed papers in the cap, brewer upright on a sturdy server. Zero your scale. Press start when the first drop of water goes in.
Upright and gentle is the whole idea. A concentrated immersion rounds out the cocoa, and the bypass opens it back up so the apple and red fruit stay distinct. Press slowly and stop before the hiss, pushing the last of the air through only drags fines and dries the finish. Let it cool to find the menthol.
